Help entering custom foods

I created a custom meal consisting of 1 can tuna and some whole wheat pasta and veggies. it had a lot of other ingredients in it too. i made a huge batch and ate it for 4 days. However, when I go to add food and clikcked on my custom meal, it added the whole recipe and I couldn't use the drop down bar to make it smaller. How should these custom foods be entered initially? Please help!
